Dinner date

The ice melted enough for us to venture out to meet Nikki for dinner tonight at the La Hacienda Ranch in Frisco. We ate some delicious Mexican food and caught up on each other's lives. Then it was a quick run over to Target ... I think every time we meet we end up there for some shopping. It was soooo cold!!

Cold weather and warm soup



I woke up this morning to chilly winter weather and a slushie ice mess. Thomas attempted to go to work, but came back home with milk and a few other groceries instead and merely stated, "You need to stay home today too."

We've been cooped up in the house all day, doing housework and working in the baby room. Thomas spent some time in the kitchen (between his work calls) cooking a great chicken tortilla soup. He's such a good cook although this recipe looks pretty easy. It certainly was tasty!



Hearty Chicken Tortilla Soup
1 lb skinless, boneless chicken breast, cut into 1" pieces
6 cups chicken broth
1 tsp cumin (Thomas used Tony Chachere's Creole Seasoning instead)
1/2 cup uncooked white rice
1 can whole kernel corn with red and green peppers, drained
1 cup chunky salsa
1 tbsp fresh cilantro leaves
2 tbsp fresh lime juice

Brown chicken in large sauce pot with a little cooking spray. Stir in the broth, cumin and rice. Heat to a boil. Reduce heat to low and cover, simmering for 20 minutes.

Stir in corn, salsa, and lime juice. Cook until the rice is tender and then serve garnished with tortilla chips.


p.s. We just watched the nightly news and they stated there were around 300 car accidents in Fort Worth (where I work) from 3 pm until now and 100 of those were critical. I am so thankful I did not venture out today.

Love is in the air

I've been working on a few valentines for gift giving. They are small envelopes that have been decorated and are the perfect size to hold a gift card or two. So cute, I'm excited to give these to a few special people!




The envelopes are called coin envelopes and are the 2.25" x 3.5" size. I found these at the office supply store.

project 365

Sharing last week's project 365 layout with you. This is how the project will look every week throughout the year and it's in a binder to keep everything together. It's been a fun project so far, but the daily picture taking is getting tougher! The first two weeks had mostly pictures of "stuff" but I realized that I should have pictures of us in there every week too.

From Twilight to Dawn

I snuck out and went to a movie today. After finishing the books last month, I was dying to see the Twilight movie. The books were fabulous...you know you're reading a great series when you don't want it to end. The movie was good but I enjoyed the books so much more.

While I was out and about, I also stopped by to look at the kitties up for adoption. I'm still undecided about getting another cat, but I continue to look anyway. Crazy I know. I think if we had our baby girl, I wouldn't spend time looking to fill the void that KittyBitty left.

Speaking of which, here's the color that we picked out for the baby's room. Have you shopped for paint lately? There's so many different colors of purple, it was hard to choose!



Here's a sneak peek of the room. We've painted! But we're still working on the rest of the room.



Hope you have a great week! Thomas is headed to Temple and Sulphur Springs this week for work. Certainly not the usual glamorous places to visit, but he's going to stay with his parents in Temple for the night. This week will be an easy work week for me, yay!

1700 mile road trip

I just got back home today from my company travel to El Paso and Oklahoma City. I stayed an extra day to attend a basketball game, Oklahoma City Thunder vs Detroit Pistons, so the trip ended well! Here's a few photos from the trip which included a visit to the Cadillac Ranch in Amarillo and the pistachio farm called McGinns in Alamogordo, NM because they have a GIANT Pistachio out front.







On my way back through OK I stopped and picked up Deana's favorite diet mountain dew red. We still can't find these in TX so we have to stock up!

I have the whole day today to spend organizing and purging, must be the new year that makes me want to clean and organize. I went through a kitchen cabinet and poured out all of the alcohol. Sorry Mom, but you can see the dust on the bottles showing how long they've been there. Yep, I really did pour it all down the drain. There are also several bottles of wine and I'm wavering about whether to pour them out or give them away.

Thomas has been traveling all week, he went to El Paso and then Oklahoma City. It's been nice being home alone for a few days especially since I've been off both yesterday and today!

I'll be sharing my random daily photos from time to time, plus I'll share the weekly layouts that I create with them soon!

I've had the sicky-icky crud this week. I knew I'd catch it after Thomas had it last week. Trying to suck it up and work through the weekend. Plus, we have the Josh Gracin concert Saturday night! We're making a weekend of it and staying in Fort Worth that night. Thomas has had a nice break from traveling, but all that changes next week. His calendar is full the rest of the month.

It's a new happy year!

I'm feeling really excited about the new year. I have lots of goals that I've been working on for quite some time and it just feels like everything is going to come together in 2009. I have also noticed some extra energy (and time since the holidays are over) and I'm compelled to spend it on getting closets and drawers organized. I hope the trend continues as I have a lot of closets!

We received some great news about the referrals from China. They are completely finished with all of February 2006! Our log in date is March 29, 2006 and we'll be anxiously watching the March referrals. (They announce them in date order.) We've waited so long to reach this point that it almost feels like a dream. Pinch me!~

Have you made any New Year's resolutions? I always make them every year. I tend to start out gangbusters and do really well and then falter a few months later. But this is a new happy year and a new chance to stay on track.

I resolve to:

1. Eat healthy and pack a healthy brown bag lunch every day. Of course, I started this last year and did really well losing 40 pounds. I have managed to keep that off, but I never got back on track to lose more.
2. Exercise - either walking or working out on the Wii fit. The stepping routines are really fun!
3. Save, save, save - yeah, it's going to cost a pretty penny for this trip to China.
4. Be less impatient, as I don't believe I could eliminate it altogether, but I do want to keep it in check.

I decided to make this little sign to help keep myself (and Thomas, can't do this alone) on track and then hung it on the door in the kitchen. It's always best to see a reminder every day to keep the focus alive! I'll have to walk by it at least once or twice a day!



Am I that old to have a 20 year class reunion coming up this year?! Yikes!
