Cold weather and warm soup



I woke up this morning to chilly winter weather and a slushie ice mess. Thomas attempted to go to work, but came back home with milk and a few other groceries instead and merely stated, "You need to stay home today too."

We've been cooped up in the house all day, doing housework and working in the baby room. Thomas spent some time in the kitchen (between his work calls) cooking a great chicken tortilla soup. He's such a good cook although this recipe looks pretty easy. It certainly was tasty!



Hearty Chicken Tortilla Soup
1 lb skinless, boneless chicken breast, cut into 1" pieces
6 cups chicken broth
1 tsp cumin (Thomas used Tony Chachere's Creole Seasoning instead)
1/2 cup uncooked white rice
1 can whole kernel corn with red and green peppers, drained
1 cup chunky salsa
1 tbsp fresh cilantro leaves
2 tbsp fresh lime juice

Brown chicken in large sauce pot with a little cooking spray. Stir in the broth, cumin and rice. Heat to a boil. Reduce heat to low and cover, simmering for 20 minutes.

Stir in corn, salsa, and lime juice. Cook until the rice is tender and then serve garnished with tortilla chips.


p.s. We just watched the nightly news and they stated there were around 300 car accidents in Fort Worth (where I work) from 3 pm until now and 100 of those were critical. I am so thankful I did not venture out today.
